Fast Soup

leaksoupWell, at least easy soup! It is cold, I am hungry and soup in the panacea of all ills.

Tonight I am going to make soup and I thought I would tell you what I am going to do. Soup is an interesting beast. It comes in various forms from the creamy bisque, to the refined consomme to the chunky veggie soups of our youth and even the light, chilled wonders of the French. It is easy to make, fresh and wonderful. So why is it that the vast majority of people eat the rubbish you get in cans? Even premium makes like Baxter’s comes no where near the taste of a home made soup.

But, it’s complicated yes? Takes forever? Nope – easy as anything! Read on ….

Okay, so what I will cook tonight is a very simply, very warming thick veg soup with some spices to give it a kick. No quantities here – just add more or less stock to get however thick you want!

  • Potato – just a couple pealed and chopped
  • some parsnip, chopped up
  • Pile of leaks, cleaned and chopped
  • seasoning
  • Curry powder
  • Butter
  • Chicken stock
  • Bunch of Coriander

Right!

Big pan! Melt the butter then fry the leaks over a medium heat till nice and soft. Add the curry powerder and fry for a few moments. Make sure nothing burns! Throw in the veggies. You can add others like carrots, pumpkin – up to you really. And chuck in the chopped up coriander

Give it a good stir.

Cover with chicken stock and simmer till everthing is soft. Season to taste

Get one of those hand blenders, take the pot of the heat, and blend till smooth. If it is too thick, add some more stock.

Large lumps of bread, roaring fire, pet rat to hug (will probably like a teaspoon or two of the soup – rats like soup), I mean, how warm and cosy do you want your evening!
