Really Quick Pasta

Okay, sometimes dinner takes way to long. So lets speed it up a little. This is a really, really easy way of serving pasta with a tomato based sauce. It is so quick and easy I wont even put up a picture. Right:

Put a saucepan of water on to boil. Chop 1 onion, two cloves of garlic and 1 stalk of celery. Put in a large frying pan 3 tablespoons good olive oil and put it on a medium to high heat. Put in the onions (sort of soffritto) and cook till soft. Chuck in a big handful of thickly cut chunks of pancetta or smoked bacon. Cook till just crisping up a bit. Into this empty an entire jar of double concentrated tomato paste. Stir well. Now put in a cup of red or white wine (up to you) and cook till reduced. Hopefully your water is now boiling. So put in fresh pasta – enough for a couple of you. Cook for 2 minutes, drain and put it into the frying pan with the sauce, which should not be reduced with olive oil pooling all over it (make sure is doesn’t burn). Stir rapidly, empty onto plates with chopped basil and plenty or Grana Padano. Phew!
